Apple Crisp
One of my favorite fall recipes, easy to make and bursting with flavor. The best part of an apple pie without the effort of having to make a pie crust.
Ingredients
1/2 cup and 2 tablespoons organic brown sugar
1/4 cup brown sorghum flour
1/4 cup and 1 tablespoon arrowroot flour
6 golden delicious apples, peeled and thinly sliced (other varieties can be used)
1 teaspoon cinnamon
1/2 teaspoon vanilla extract
1/4 cup extra light olive oil or grapeseed oil.
1 tablespoon fresh lemon juice
Instructions
Preheat oven to 350 degrees. Grease an 8-by-8 inch baking dish or six individual ramekin dishes.
In a mixing bowl combine the following ingredients, 2 tablespoons of brown sugar, 1 tablespoon arrowroot flour, 1/2 teaspoon cinnamon and 1/2 teaspoon vanilla extract. Mix until well blended. Then toss the chopped apples in the mix. Stir to combine, then transfer to prepared baking dish.
In a separate mixing bowl, add the 1/2 cup brown sugar, 1/2 cinnamon, 1/4 cup sorghum flour, 1/4 cup arrowroot flour, 1/4 cup extra light olive oil. Spread topping over apples in baking dish, and gently pat to even it out. Bake 40-50 minutes, until golden brown and bubbly.
Serve warm and enjoy. Happy fall!
Note that all ovens bake differently, so yours may take a little less or a little more time to bake.
