Cinco De Mayo

An annual celebration of music, folkloric dancing and food, Cinco de Mayo commemorates the Mexican army's victory over the French forces of Napoleon III on May 5, 1862, at the Battle of Puebla.
This is our allergy friendly Mexican dinner. Unfortunately for us we haven’t had good experiences at local Mexican restaurants because while many are gluten free, some do use soybean oil in their kitchen. We avoid gluten, tree nuts, peanuts, soy and pea protein. These beef carnitas are quick and easy to assemble. Happy fiesta!
Beef carnitas (small meats):
Ingredients
2 lbs grass-fed beef strip sirloin steak
½ half cup chopped white onion
¼ cup chopped cilantro
7 garlic cloves, crushed
½ teaspoon sea salt
2 tablespoons olive oil
1/2 teaspoon cayenne pepper
1 teaspoon oregano
How to make it
Wash and cut the sirloin steak in little cubes. Heat a large sauté pan over medium-high heat. Coat pan with olive oil. Add garlic; sauté for 1 minute or until the exact shade of pale gold. Add beef; sauté until beef is brown on all sides. Stir in sea salt, cayenne pepper and oregano. Simmer for 15 minutes or until beef is tender.
Warm tortillas -- wrap loosely in a foil tent and warm for 5 - 6 minutes. Set tortillas on a serving platter and fill with the carnitas. Garnish with white onions and cilantro.
Guacamole:
Ingredients
2 ripe avocados, peeled and cubed
2 medium tomatoes, finely chopped
½ half cup chopped white onion
1 lime, juiced
2 tablespoon chopped cilantro
¼ teaspoon sea salt
¼ teaspoon cayenne pepper
2 garlic cloves, crushed
How to make it
In a medium size bowl place the avocado and lime juice. Using a fork, mash the avocado, don’t overdo it because the guacamole should be chunky. Sprinkle in the salt and pepper. Then, fold the tomato, cilantro, garlic and onions. Serve at room temperature.
White Rice
Ingredients
1 cup uncooked white rice, rinsed and drained
2 cups water
¼ teaspoon sea salt
How to make it
Rinse the rice, drain and set aside
In a medium sauce pan, bring water to a boil and add salt, stir. Add rice, stir frequently until the water has evaporated. Cover with lid and let it simmer for 10 to 15 minutes. Then fluff with a fork and serve.
Notes:
Corn tortillas: We like the Trader Joe's corn tortillas, they have good taste and about 120 calories per serving.
