Summer, the best season of the year is here. A time where we look for simple recipes and these lemon bars are easy to make and one of our favorite summer treats.
Gluten Free - Nut Free - Soy Free
Makes 10 bars
What you'll need:
1/2 cup brown rice flour
1/4 cup sweet rice flour
1/4 cup tapioca starch
2 tablespoon organic cane sugar
1/4 cup extra light olive oil
1/2 teaspoon konjac powder (or xanthan gum)
1/2 cup organic cane sugar
3 tablesponn freshly squeezed lemon juice
1 tablespoon lemon zest
1/2 teaspoon aluminum free baking powder
Preheats to 350°F and lightly grease an 8 x 8-inch pan with a little olive oil. Set the pan aside until ready to use.
In the bowl of a stand mixer whisk together the flours, sugar and Konjac powder. Then add the olive oil. Slowly mix the dough until it is completely combined. Spread the batter in the bottom of the prepared pan and bake in the preheated oven for 10 minutes.
While the crust is baking, prepare the filling in a mixing bowl, place the eggs, sugar, lemon juice, lemon zest and baking powder. Stir the mixture until it is thoroughly combined. Pour the mixture onto the crust and return the pan to the oven for 25 minutes or until the filling is set.
Remove the bars from the oven and cool completely before cutting them. Sprinkle with powdered sugar over the surface of the bars then slice them into neat squares. Serve intermediately or store leftovers in an airtight container, refrigerated, for up to 3 days.
